1. Dough Too Sticky or Not Forming Properly

Possible Causes:

- Too much water in the dough mixture

- Low-protein flour (weak gluten structure)

- Insufficient kneading time


Solutions:

✔ Adjust hydration – Reduce water by **5-10%** and gradually add more if needed.

✔ Use high-gluten flour (12-14% protein) for better elasticity.

✔ Increase kneading time by 2-3 minutes to develop gluten.

✔ Add a binding agent like 1 tsp xanthan gum (for gluten-free noodles).



2. Noodles Breaking or Too Brittle

Possible Causes:

- Dough too dry

- Over-rolling (thins out noodles too much)

- Improper drying technique


Solutions:

✔ Increase moisture – Add 1-2 tbsp water or oil to the dough.

✔ Adjust roller settings – Don’t compress dough sheets too thin in one pass.

✔ Air-dry noodles gradually – Avoid direct heat (use a fan instead).



3. Noodles Sticking Together After Cutting

- Dough too soft

6. Noodles Have Rough or Ragged Edges

- Excessive pressure during extrusion

7. Poor Noodle Texture (Too Soft or Mushy)

✔ Shorten drying time or use cooler air.

✔ Use premium flour (avoid high-starch blends).

8. Machine Leaking Dough or Water

- Loose fittings or seals

- Cracked extrusion chamber

- Excessive dough pressure


Solutions:

✔ Tighten screws and seals (regular maintenance).

✔ Inspect for cracks (replace parts if damaged).

✔ Avoid overloading the hopper.

Lubricate moving parts monthly – Prevents wear and tear.
